Chef Rob Ruiz was penniless and destitute in Hawaii when he decided to turn his life around and become a restauranteur. Through sheer determination and passion he worked his way up from nothing to opening a preeminent restaurant in Carlsbad, Land & Water Company. Yet his impressive accomplishments are not stopping with his signature restaurant. Rob is working with scientists on a national level to ensure that all seafood purchased in the United States is sustainable and tracked to the source. In 2012, Rob invented edible QR codes that customers can scan into smart phones to retrieve data on the seafood they consume.
And speaking of which, the food at Land & Water is organic, fresh and outstanding. The Green Roll is an inventive California twist on sushi with quinoa, enoki mushrooms, house pickles, Haas avocado and kale chips wrapped in steamed swiss chard then topped with a mirin vinaigrette. The house Moscow Mules made with Batch Craft Ginger Beer are also exceptional.
